Macaroon Apple Pie



Pie Shell




  1. In a bowl, combine flour and salt; cut in shortening until crumbly. Gradually add cold water, tossing with a fork until a ball forms. Roll out pastry to fit a 9-inch pie plate; flute edges.
  2. Toss apples with sugar and cinnamon; pour into crust.
  3. Bake at 375 degrees F for 20 minutes.
  4. Meanwhile, combine the first four topping ingredients in a bowl. Stir in egg, butter and vanilla extract until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover.
  5. Bake 30 minutes longer or until apples are tender.

Makes 6-8 servings.
