Rhubarb Pie

  • 5 cups rhubarb, diced
  • 3 tablespoons tapioca
  • 1 1/4 cups granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 1 teaspoon lemon rind or juice


  1. Mix; put into pie shell and bake at 350 degrees F for 35 minutes.
