Bourbon Brat

Check out this recipe from the 2021-2022 Lambeau Field concessions menu for Bourbon Brat to create a craveable sandwich for family and friends. It’s filled with a Johnsonville Brat, topped with beer-braised onions, sausage strips bourbon jam and melty provolone cheese on a pretzel roll.

Bourbon Brat recipe

Yield: 1 sandwich

Ingredients

Brat

  • 1 link Johnsonville Original Brat
  • 2 slices provolone cheese
  • 1/4 cup Bourbon Jam
  • 2 tablespoons Beer-Braised Onions
  • 1 pretzel bun

Sausage Strips Bourbon Jam

  • 1 (10 ounce) package Johnsonville Original Sausage Strips, chopped
  • 1 1/2 cups chopped sweet onion
  • 1/2 cup dark brown sugar
  • 2/3 cup bourbon
  • 2 tablespoons balsamic vinegar

Beer-Braised Onion

  • 2 tablespoons canola oil
  • 3 cups thinly sliced onions
  • 1 bottle (12 ounces) dark or amber beer, divided

Instructions

Brat

  1. Cook brat according to package directions.
  2. Spoon beer-braised onions onto bun button; top with the cheese, bourbon jam, brat and bun top.

Sausage Strips Bourbon Jam

  1. Cook sausage strips according to package directions. Remove sausage strip pieces; keep drippings in pan.
  2. Cook and stir onions in drippings until golden brown; about 5 minutes.
  3. Add brown sugar and bourbon; cook and stir until sugar is dissolved. Remove from heat.
  4. Transfer to a food processor. Add vinegar; process until finely chopped.

Beer-Braised Onions

  1. In a large skillet, cook and stir onions over medium heat, stirring frequently until golden brown; about 10 minutes.
  2. Add 1/3 can of beer, cook and stir over medium heat to reduce liquid; about 5 minutes.
  3. Add another 1/3 can of beer, cook and stir over medium heat to reduce liquid; about 5 minutes.
  4. Add remaining beer, cook and stir over medium heat to reduce liquid; about 5 minutes.
