Italian Vegetable Focaccia Sandwich

The little time needed to make this sandwich, you’ll spend shopping! Just three ingredients from the deli and bakery provide the fixings you’ll need for this intriguing veggie favorite.

Italian Vegetable Focaccia Sandwich

Focaccia, an Italian bread shaped into a large, flat round, is often drizzled with olive oil and topped with Parmesan cheese before baking.

Look for focaccia in the bakery, deli or frozen-food section of the grocery store.

Using already-shredded mozzarella cheese is certainly easy. For slightly different Italian flavor, shred provolone cheese, which has a slightly smoky flavor, or Fontina cheese, which has a subtle nutty flavor.

Ingredients

  • 1 (10 to 12 inch) round focaccia bread
  • 2 cups (8 ounces) shredded mozzarella cheese
  • 2 cups deli marinated Italian vegetable salad, drained and coarsely chopped

Instructions

  1. Sprinkle bottom half of focaccia with 1 cup of the cheese.
  2. Spread vegetables over cheese.
  3. Sprinkle with remaining cheese.
  4. Top with top of bread.
  5. Cut into wedges.
