Chicago Public School Cafeteria Butter Cookies

  • 2 sticks (1 cup) softened butter
  • 2/3 cup granulated sugar
  • 2 cups plus 2 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract


  1. Heat oven to 350 degrees F.
  2. Cream butter and sugar until fluffy.
  3. Add vanilla extract.
  4. Mix in flour in small increments.
  5. Roll dough into balls; Flatten on ungreased cookie sheets.
  6. Bake until golden brown.

Makes about 1 1/2 dozen.
