Lunch Lady Peanut Butter Bars

These are also known as "Flying Saucers."

Lunch Lady Peanut Butter Bars recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 eggs, whisked
  • 1 1/2 cups peanut butter, separated
  • 1 1/2 cups (3 sticks) unsalted butter (room temperature)
  • 1/2 cup milk + 2 tablespoons, divided
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 cups confectioners' sugar

Instructions

  1. Heat oven to 400 degrees F and prepare a jellyroll pan by greasing it or lining it with parchment paper.
  2. In a separate bowl, mix together the dry ingredients.
  3. In another bowl, whisk together 1/2 cup milk, vanilla extract and eggs.
  4. In a saucepan, melt 1 cup (2 sticks) butter and 1 cup peanut butter and bring it to a boil. Remove from heat and add the dry ingredient mixture slowly, followed by the milk and egg mixture. Mix until well combined.
  5. Pour the batter onto the cookie sheet and spread it evenly to the edges. Bake for 20 minutes or until a wooden pick inserted in the center comes out clean. Let it cool completely before frosting.
  6. For the frosting, in a saucepan, bring 1 stick butter and 1/2 cup peanut butter to a boil.
  7. Add 2 tablespoons milk and slowly mix in the confectioners' sugar until well combined.
  8. Pour the frosting over the cake and spread it evenly to the edges. Let it cool and set before serving.
