Lunch Lady Peanut Butter Bars
These are also known as "Flying Saucers."
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 eggs, whisked
- 1 1/2 cups peanut butter, separated
- 1 1/2 cups (3 sticks) unsalted butter (room temperature)
- 1/2 cup milk + 2 tablespoons, divided
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 4 cups confectioners' sugar
Instructions
- Heat oven to 400 degrees F and prepare a jellyroll pan by greasing it or lining it with parchment paper.
- In a separate bowl, mix together the dry ingredients.
- In another bowl, whisk together 1/2 cup milk, vanilla extract and eggs.
- In a saucepan, melt 1 cup (2 sticks) butter and 1 cup peanut butter and bring it to a boil. Remove from heat and add the dry ingredient mixture slowly, followed by the milk and egg mixture. Mix until well combined.
- Pour the batter onto the cookie sheet and spread it evenly to the edges. Bake for 20 minutes or until a wooden pick inserted in the center comes out clean. Let it cool completely before frosting.
- For the frosting, in a saucepan, bring 1 stick butter and 1/2 cup peanut butter to a boil.
- Add 2 tablespoons milk and slowly mix in the confectioners' sugar until well combined.
- Pour the frosting over the cake and spread it evenly to the edges. Let it cool and set before serving.
