Bibingka (Sweet Rice Cake)

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup (1 stick) butter or margarine
  • 6 eggs
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 3 cup mochiko (sweet rice flour)
  • 2 tablespoons baking powder

Instructions

  1. Heat oven to 350 degrees F.
  2. Mix sugar and melted butter.
  3. Add eggs and mix until blended with sugar mixture.
  4. Add milk and vanilla extract. Mix.
  5. Add sweet rice flour and baking powder. Mix well.
  6. Pour into a 9 x 13-inch pan and bake for 35 to 45 minutes.
