Banana Bread
(Pao de Banano — Guatemala)

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 2 large bananas, mashed
  • 1/4 cup milk
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1 1/2 teaspoons grated lime peel
  • 1 tablespoon lime juice

Instructions

  1. Heat oven to 350 degrees F. Grease bottom only of 9 x 5-inch loaf pan.
  2. Mix all ingredients; beat 30 seconds. Pour into pan. Bake until wooden pick inserted in center comes out clean, 70 to 80 minutes.
  3. Cool slightly. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.
  4. To store, wrap and refrigerate no longer than 1 week.
