Mexican Street Corn Casserole
Your favorite Mexican Street Corn in a delicious casserole.
Ingredients
- 32 ounces frozen corn, thawed
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne (optional)
- 10 ounces queso fresco, grated or crumbled, divided
- 1/4 cup fresh cilantro, chopped
Instructions
- Put all ingredients (use only half of the queso fresco) into a casserole dish and mix very well.
- Bake for 35 minutes at 350 degrees F.
- Let it cool and then sprinkle the remaining 5 ounces queso fresco and chopped cilantro on top.
- Serve with tortilla chips.
