Mexican Street Corn Casserole

Your favorite Mexican Street Corn in a delicious casserole.

Mexican Street Corn Casserole recipe

Ingredients

  • 32 ounces frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne (optional)
  • 10 ounces queso fresco, grated or crumbled, divided
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Put all ingredients (use only half of the queso fresco) into a casserole dish and mix very well.
  2. Bake for 35 minutes at 350 degrees F.
  3. Let it cool and then sprinkle the remaining 5 ounces queso fresco and chopped cilantro on top.
  4. Serve with tortilla chips.
