Adobo (Smoked Mexican Chile Marinade) — This spicy marinade owes its unusual flavor to the chipotle, a smoked jalapeno chile. Chipotles are usually sold canned in tomato paste. Look for them at Mexican and Latin American markets. Adobo marinade goes particularly well with pork.
Chile Colorado — Serve this warm with enchiladas, burros, chimichangas and other dishes.
Chile de Arbol Hot Sauce — Use to sprinkle on tacos, tostadas or other snacks. You can also dash some into pozole, menudo or other soups. It lasts indefinitely. It's very close to Tabasco sauce, but is a lot better.
