Field Grade Spaghetti Sauce

Gincart's Spaghetti Sauce — Adapted to my taste over many years of tweaking.The sauce is enough for 1 pound pasta and you may have to adjust seasonings to your taste. This is a great meatless sauce and on occasion I will add my own meatball recipe or Italian sausage when the mood strikes. Enjoy!
Grandma Vinny's Sauce — This is from my Italian grandmother, Vincenza. Of course, she never wrote anything down so my sister and I used to follow her around the kitchen when we were young. Now I know some of you are thinking, "what! no garlic?" Vinny was from Naples but she rarely used garlic and when she did she used it sparingly (she'd put it on a wooden pick and fish it out later) but obviously you can use as much
garlic as you want.
